Cauliflower salad

Cauliflower

Salad with cauliflower, curry, olive oil, onion, pomegranate seeds and a homemade dressing

Ingredients
500 g cauliflower
2 tbsp olive oil
1 ½ tbsp. curry
Salt & pepper
1 spring onion
Handful pomegranate seeds

Dressing
3 tbsp coconut yogurt
1 clove of garlic
Pinch of lemon
Olive oil

Instructions
Preheat the oven at 200 degrees Celsius. Cut the cauliflower in small roses and add to an oven dish. Sprinkle with olive oil and add the curry powder, salt and pepper. Rub the curry powder into the cauliflower till everything looks yellow and place in the oven for around 30 minutes adding a little water to the oven dish. After 15 minutes in the oven give the cauliflower a good stir.

While the cauliflower is in the oven, remove the pomegranate seeds from the pomegranate and chop the spring onion. Place on the side till the cauliflower is ready.

For the dressing add the yogurt, a drop of lemon and olive oil in a small bowl. Press the garlic and give it a mix.
When the cauliflower is prepared top with the spring onion, pomegranates and dressing. A lovely side dish which mixes very well with rice.
