Carrot dip

Basically, this is rabbit heaven

Carrot dip with sweet potato, carrots, onion, garlic, tahini, harissa, olive oil, lemon juice, salt & pepper

Ingredients
1 sweet potato
4 carrots
1 red onion
3 garlic cloves
2 full tsp tahini
1 tsp Harissa
2½ tbsp olive oil
Lemon juice
Salt & pepper

Instructions
Preheat the oven to 200 degrees Celsius. Put some baking paper on the oven tray. Chop all the vegetables and place them on the tray. Season them with some olive oil, salt & pepper and bake the vegetables in the oven for at least 25 minutes.

When ready throw all the roasted vegetables together in a bowl and add tahini, harissa, olive oil and some lemon juice. Mix it all together till it’s smooth. You’re ready to dip!
