Rice salad in a jar

It’s exciting when you find parts of yourself in someone else

Salad with rice, peanuts, carrots, cucumber, onion, garlic, lemon, orange, sesame seeds, curry and turmeric

Ingredients
200 g (dry) brown rice
2 handfuls of peanuts
3 carrots
3 apricots
1 cucumber
1 red onion
1 garlic clove
Half a lemon
Half an orange
1 full tbsp sesame seeds
1 tbsp curry
1 tsp turmeric

Instructions
Boil the water and add the rice. Cook for 10-15 minutes. In the meantime cut the cucumber and place in a bowl. Slice the carrots with a spiral slicer and add to a second bowl.

Toast the sesame seeds and add this to the bowl with the carrots. Squeeze the orange over the carrots and sesame seeds and mix. Let it stand for a while to let the orange seep into the carrots. Flavor the cucumber with the lemon juice and let it stand for a while too.

Toast the peanuts and place them in a bowl.
Drain the rice when ready and add the curry and turmeric. Fry the onion and garlic till slightly brown and add to the rice. Cut the apricots and add these to the rice as well. Mix all the ingredients.

When all layers are prepared, you can place them in the jar. Start with the rice at the bottom, then add the carrots followed by the cucumber and finish with the peanuts at the top. A perfect salad to take with you to work or during a day out. Enjoy your salad in a jar!
