Green pancakes

I took a walk in the woods and came out taller than the trees

Green pancakes with peas, chickpeas flour, avocado, onion, garlic, basil, vegetable stock cube, cumin, olive oil and water

Ingredients
125 g green peas
125 g chickpeas flour
150 ml water
1 avocado
1 small red onion
1 garlic clove
1 tsp cumin
1 handful fresh basil
1 vegetable stock cube
Olive oil

Instructions
Weigh the chickpeas flour, green peas and water and place in a bowl. Cut the vegetables and add to the basil, cumin and vegetable stock cube in the bowl. Mix till you get a smooth and solid mass and let it rest in the fridge for half an hour.

Heat some olive oil in a pan and add a spoon of green batter to make a small pancake (around 7 cm diameter). Fry the pancakes on a low heat till they are brown on both sides. You can smear them with your favorite spread, but they are also delicious when served plain. Enjoy your green adventure 🙂
