Pistachio, avocado & banana ice cream

This is what I call monkey business

Homemade ice cream with banana, avocado, mango, lemon, coconut milk, shredded coconut, pistachio, cacao nibs and vanilla powder

Ingredients
2 bananas
1 avocado
1 mango
1 lemon
50 ml coconut milk
Shredded coconut
Unsalted pistachio nuts
Cocoa nibs & vanilla powder

Instructions
Grind one of the bananas with a fork till you have a rough and sticky structure. Make small balls around the ice sticks and place in the freezer.

Make a smooth mousse of the other banana, avocado, mango, coconut milk, lemon and vanilla powder. Place in a bowl and leave in the fridge for around 15 minutes. In the meantime chop the pistachio nuts and mix them together with some cocoa nibs and shredded coconut and place in a bowl.

Get the banana balls out of the freezer and the mousse out of the fridge. Role the balls trough the mousse first and secondly dip in the pistachio/cacao nibs/ shredded coconut mix. When finished place in the freezer again for a while and your ice creams are good to go. Don’t forget to share 😉
