Zucchini noodles with nuts, spinach, avocado, basil, tomatoes, garlic, lemon, olive oil and salt and pepper
2 hands of basil (some extra as topping)
2 hands of cashew nuts
1 ½ hand of spinach
1 (small) avocado
1 garlic clove
1 hand of pine nuts
Salt & pepper
Make zucchini noodles by using a spiral vegetable slicer or a vegetable peeler and put them in a bowl.
Chop the garlic and avocado and mix together with spinach, basil, cashew nuts, olive oil and some lemon juice. Add the sauce to the zucchini noodles and mix with your hands.
Toast the pine nuts in a pan till slightly brown. In the meantime half the cherry tomatoes. Taste with some basil, salt & pepper and add on top of the noodles with sauce. Enjoy your meal.
