Soup with zucchini, onion, bouillon, coconut milk, bouillon cubes, water, coriander, cumin, salt and pepper
(for 2 bowls)
3 large zucchini’s
2 bouillon cubes
160 ml coconut milk
160 ml water
Black pepper, salt, ginger, coriander & cumin to taste
Cut the zucchini and onion in pieces. Heat some coconut oil in a soup pan and caramelize the onion. Add the zucchini and bake shortly together with the onion. Pour the water on top of the onion and zucchini and add all other ingredients. Boil briefly and mix the ingredients in the pan to get a nice and smooth soup.
