You’re one in a melon

Watermelon basil salad with red onions, lemon and pine nuts


Ingredients
½ Watermelon
Handful of pine nuts
2 Red onions
Lemon
Handful of basil leaves

Instructions
Press the lemon juice in a bowl. Cut the onions in half and slice in parts. Put them in a bowl and stir so the onions can soak up the lemon juice. Chop the watermelon in around 4 slices. Cut triangular shapes from the slices and place on a plate. Toast the pine nuts and pick a handful of basil leaves.
Add the onions, toasted pine nuts and basil leave on top of the watermelon. Mix the ingredients and enjoy your great refreshing salad.
