Eggplant pizza with paprika, tomatoes (sauce), rocket leaves and vegan mozzarella
1 handful of tomatoes
1 red onion
Some rocket leaves
Homemade tomato sauce (see recipe on site)
Optional: vegan mozzarella
Preheat the oven to 200 degrees Celsius. Cut the eggplant into thick rounds and divide the tomato sauce. Chop the other vegetables in small pieces and add to the eggplant pizza as well. When ready, place in the oven for around 20 minutes.
Serve hot and with a bit of fresh rocket leave on top.
Tip: you can use vegan mozzarella as topping when you like.
