Healthy snack with dates, lemon zest, pistachio and coconut yogurt 🍋
Handful of large dates
Handful of pistachio nuts (unsalted)
125 g coconut yogurt
Remove the shell from the pistachio nuts. Place a few whole nuts on the side and chop the remaining nuts into pieces. Remove the pit from the dates by making an incision across the length.
Depending on the size of the date, place one or two whole pistachio nuts on the inside. Add the coconut yogurt and top with the chopped pistachio nuts and a bit of shaved lemon zest. Enjoy your snack!
