Monkey cacao peanut butter cake

What’s your sweetest moment?

Monkey cake with walnuts, almond spread, dates, peanut butter, water, cacao nibs, coconut yogurt and banana

Ingredients
Base
100 g walnuts
4 tbsp almond spread
4 tbsp cacao
150 g dates
Some coconut oil to prevent sticking to the mold

Filling
250 g dates
2 ½ tbsp peanut butter
125 ml water

Topping
Handful of cacao nibs
2 full spoons of coconut yogurt
½ banana

Instructions
Base
Place the walnuts, dates, almond spread and cacao in a bowl and mix. Place some baking paper on the bottom of a baking mold (I used a 12 cm baking mold) and use the coconut oil to prevent the mixture sticking to the sides. Put the mixture in the mold and spread evenly over the bottom and sides. Place in the fridge. In the meantime prepare the filling and topping of the cake.

Filling & topping
Mix the dates with the peanut butter and water till you have a smooth paste. Add the filling to the base and spread evenly. Finally add the coconut yogurt on top and sprinkle the cake with cacao nibs. Shortly before serving, cut the banana and add on top as well. Sharing the cake with friends (or monkeys) make you enjoy the cake even more 😉
