Spicy dinner with potato, pumpkin, pepper, onion, lime, garlic, harissa, coriander leaves, olive oil, salt & pepper
Ingredients
450 g potatoes
250 g pumpkin
1 red pepper
1 red onion
3 cloves garlic
1 tbsp harissa
Handful of coriander leaves
Juice of one lime
Olive oil
Salt & pepper
Instructions
Chop the pumpkin and potatoes into large cubes and boil for 10 minutes. In the meantime cut the onion, garlic and pepper in small pieces and add to a frying pan. When the potatoes and pumpkin are ready, drain and place in a bowl and season with the harissa herbs, salt and pepper.
Fry the onion, garlic and pepper for a short time. Add the seasoned potatoes with pumpkin and fry till slightly brown. Just before serving, add the chopped coriander and juice from the lime. Enjoy your dinner!
