Orange salad with tangerine, kaki fruit, carrot, raisins, pistachio and mint leaves. Homemade dressing with orange juice and coconut yogurt
½ orange plus some juice
¼ kaki fruit
¼ carrot shredded
Handful of raisins
Handful of pistachio nuts
Some mint leaves
1 tbsp coconut yogurt
Peel the orange and tangerine. Split the tangerine in parts and place on the side. Cut one half of the orange in pieces and place together with the tangerine on the side. Use the juice of the other part of the orange for the dressing.
Shred the carrot in large pieces and place on the side with the tangerine and the orange. Cut the kaki fruit and use ¼ to make small cubes. Add the kaki with the tangerine, orange and carrot to a bowl and give a good stir. Chop the pistachio nuts and add them on top together with the raisins and mint leaves.
Prepare the dressing by adding a tablespoon of coconut yogurt and some orange juice to a bowl. Mix and sprinkle over the salad. Enjoy!
