Vegetable carpaccio with kohlrabi, radish, beetroot, cucumber, pine nuts and rocket leaves
Ingredients
3 radish
1 kohlrabi
1 beetroot (chioggia)
ΒΌ cucumber
1 tsp pine nuts
Handful rocket leaves
Dressing
1/8 tsp mustard
Olive oil
Squeeze of orange juice
1 tsp soy yogurt
Instructions
Slice or cut the vegetables in very thin slices and place on a plate. For the dressing mix all the ingredients in a small bowl. When presenting add a hand of rocket leaves and roasted pine nuts. Top with the dressing and you have a perfect starter.
